Cacao Cia Pudding

Chia seeds are a nutritional wonder. They are small, but mighty and packed full of beneficial Omega 3 fatty acids which are necessary for supporting our immune system, brain health, joint health, and much more. They also contain valuable vitamins and minerals such as calcium, and are very high in plant-based protein. Fun fact, chia also acts as a bulk laxative with lots of beneficial fibre to keep your bowels healthy, active, and moving.

This recipe also includes raw cacao, one of my favourite food-medicines because it’s always a smooth, rich and delicious treat. Cacao is sourced from the cacao bean, sound familiar? That’s because the best chocolate is made from raw cacao. You may be wondering why I’m calling it cacao and not coco, and that’s because there is a significant factor that makes them very different. The process that transforms raw cacao into coco is essentially a roasting process. This damages some of the beneficial nutrients and, in my opinion at least, changes the flavour. Always look for raw cacao powder in your local health food store and buy organic and Fair Trade certified whenever possible. Cacao is a rich source of magnesium, iron, and antioxidants in addition to being a great source of fibre. What’s not to like? You can also use cacao nibs in your kitchen, they add an exciting texture to oats, muffins, and yes, chia seed pudding!

Ingredients

  • 3-4 tbsp. chia seeds 

  • ¾ cup almond milk 

  • 1 tbsp. Maple syrup 

  • ½ tsp. vanilla 

  • 1 tsp. cinnamon 

  • 1 tbsp. cacao 

  • 1 tbsp. almond butter 

Directions: 

In a glass jar, add all ingredients, and stir or shake until well-combined 

Place in the fridge overnight.

Remove from fridge in the morning (you may need to add some additional milk if it is not desired consistency) 

Top with your favourite fruit, nuts, seeds, even coconut whip and enjoy!
