BBQ Veggie Kababs

Ingredients:

  • 3-4 large zucchinis

  • 4 small bell peppers

  • 1/2 a large red onion

  • 2 cups Mushrooms (cut in half)

  • 1 tsp Garlic powder

  • 1/4 cup Olive oil

  • 1 tbsp Italian seasoning

  • 1 Lemon (fresh squeezed)

  • 1 tsp Salt

  • 1 tsp Pepper

  • Wooden skewers (soaked in cold water beforehand)

Directions:

  • Preheat the BBQ to medium heat

  • Wash all your veggies and chop into 2-3 inch pieces and set aside

  • In a mason jar, dressing bottle, or a small bowl, mix together your olive oil, spices and fresh lemon juice. Shake or stir and set aside.

  • Soak your wooden skewers in cold water for 10 minutes

  • Begin skewering pieces of your veggies onto the skewers in whatever order you choose, I like to follow a pattern so you get lots of flavour with every kabab

  • Place on a baking sheet and brush on the dressing & season with some extra salt and pepper

  • BBQ kababs on the grill for 4-5 minutes on each side (or to desired level of cooking).

  • Remove the kababs, let cool for 5 minutes and enjoy!
